Happy Easter everybody! Get those markers out again. Steve Edge delivers his latest wisdom….

The Edge Easter Omelette (Serves 1)

Ingredients

- 3 large eggs
- 250g smoked salmon, cut into thin strips
- 50 ml double cream

- 3 chopped spring onions
- black pepper
- 30g butter

Method

1. Break the eggs into a large bowl, add in the cream and beat together.
2. Add in the spring onions. Season with salt and freshly ground pepper.
3. Heat the butter in a frying pan. Once the butter is sizzling pour in the egg mixture, tilting the pan to spread the egg mixture evenly.
4. Using a spatula, start pulling the edges of the omelette to the centre.
5. Place the smoked salmon on one half of the egg mixture. Fold and fry until the omelette has just set.
6. Place the omelette on a warm plate, garnish with some more spring onion, serve at once.

    Well, well, well. Blowing eggs! Lovely!
    I am now in Cumbria getting the last of the work out of the way before having a lovely (cold!) Easter break. We do Pasch Eggs here, just in the north of the county I think! We have made them since we were kids, but so did my parents.

    Simplest method is to use the brown onion peeling (that you normally throw away) and boil the eggs with the peelings, then butter the egg shell when hot – it will then be a lovely shiny dark brown mottled egg. Better still use daffodil leaves (often wrappend in a cross shape around the egg) and other flowers to put on the egg, surround this with onion peelings and then wrap each egg in newspaper tied with string (bit like tie-dyed eggs!) , boil until ready, butter to make shine and you have wonderful creations that you can give away or put in a bowl and eat on Sunday!     Scope for Eggs Edgey Design Ltd? Going to work on an egg.

    I thought I saw one with your head on it recently! I noticed with eggcellent eye sight that you did not draw your
    face on it presumably because you eggcell in hair, unlike some of us…

    So again you have shown your eggcellent eggzentricity
